We all deserve a sweet treat sometimes, and as summer comes to an end, we are hanging tight to that summertime feeling by indulging in some of our favorite flavors. Our beach vacation included a trip to Kilwin's, where we enjoyed some amazingly tasty ice cream. Maybe it was the beach air, or perhaps it was the creamy goodness, but we were in heaven and digging deep into our bowls.


This was a rare occasion where I let myself indulge. The idea of digging into two scoops of ice cream still leaves me with regret. It was common among fellow survivors and fighters during chemo treatments to talk about abstaining from anything with sugar in it. The idea being that sugar is fuel for cancer cells. While I believe in a healthy balance and indulging every now and again can benefit the mental state, wouldn't it be great to get that same indulgent feeling from a treat you don't have to regret? And along comes "nice" cream. It's the Bennifer of the ice cream world. Nice + Ice Cream, you get the idea.


Nice cream is mainly made up of bananas and lacks refined sugars and even dairy found in conventional ice cream. With just the right balance of ingredients, you can craft a cream that will satisfy even the pickiest family members. We decided on three flavors this time—first, Toasted Coconut was the culprit behind my two scoops of Kilwin's regret. Next, we were attempting to recreate the Blue Moon flavor, and lastly, we decided on Watermelon Sugar because we can't get that song out of our head. They all turned out quite lovely!

How to Make

Toasted Coconut


Overnight or at least 6 hours before, you should slice the banana and freeze it. Also, put the can of coconut milk in the refrigerator. While the can is cooling, the cream and the water from the coconut will separate, leaving you with a marshmallowy cream.

 

In a small skillet, toast the coconut until golden brown. Be sure to watch closely as it can be easy to burn. I like to have a right mix of darker coconut to very lightly toasted pieces. Once done, set that aside. 


Blue Moon


Overnight or at least 6 hours before, you should slice the banana and freeze it. Also, put the can of coconut milk in the refrigerator. While the can is cooling, the cream and the water from the coconut will separate, leaving you with a marshmallowy cream. Steep a cup of hot water with butterfly pea flower and place it in the refrigerator for the night. 


In a blender, combine your bananas, maple syrup, salt, vanilla, and raspberries. Strain and add in the butterfly pea flower team to your mixture. Blend until smooth and transfer to a bowl and put in the freezer until frozen to the consistency you like. The longer it freezes, the harder it will become, or you can remove it earlier for a soft server texture. 


Watermelon Sugar


Overnight or at least 6 hours before, you should slice the banana and freeze it. Also, put the can of coconut milk in the refrigerator. While the can is cooling, the cream and the water from the coconut will separate, leaving you with a marshmallowy cream. Steep a cup of hot water with butterfly pea flower and place it in the refrigerator for the night. 


In a blender, combine your bananas, maple syrup, salt, vanilla, and watermelon. Blend until smooth and transfer to a bowl and put in the freezer until frozen to the consistency you like. The longer it freezes, the harder it will become, or you can remove it earlier for a soft server texture.

4 frozen bananas 

1 cup unsweetened shredded coconut

1 can coconut milk or cream of coconut

¼ cup maple syrup or coconut nectar

1 tsp. vanilla

1/8 tsp. salt


Blue Moon

4 frozen bananas 

1 cup frozen raspberries or pineapple

1 can coconut milk or cream of coconut

¼ cup maple syrup or coconut nectar

1 tsp. vanilla

1/8 tsp. salt

1 cup of butterfly pea flower tea


Watermelon Sugar

4 frozen bananas 

1 cup watermelon

1 cup of rasberries for color

1 can coconut milk or cream of coconut

¼ cup maple syrup or coconut nectar

1 tsp. vanilla

1/8 tsp. salt
