Spiced Apple Galette! Think mini apple pies and comfort food. We found inspiration in @flatlaytoday's rustic blueberry galettes. How amazing are these things, and nothing says holiday deliciousness like hot apple pies and a side of vanilla ice cream! These bring back memories of those tiny apple pies at McDs, only way nicer and a LOT less sugar. Our main goal is to create healthier desserts, and we think we accomplished that by ditching the sugar on this recipe.

How to Make
In a medium bowl, mix chopped apples, lemon juice, 1/3 cup of Swerve, tsp of paple pie spices. Store in the refridgerator for 1 hour.
On a floured surface, roll the puff pastry out into a rectangle about 1/4 inch thick. Place the pastry on a parchment lined baking sheet and place the blueberries over the pastry, leaving a 1 inch border.
After 1 hour in a sauce pan over medium heat, melt plant butter and mix in apples. Combine with 1/4 cornstarch slurry (1 tbls of water and cornstarch mixed)
Preheat the oven to 350F.
Fold the edges up and spoon in the apple mixture. Now, brush the edges of the pastry with egg and sprinkle with swerve or sugar.
Transfer over to the oven and bake for 25 - 30 minutes or until golden brown.
Let cool for a little bit and serve with vanilla ice cream.
Before servering top with vanilla ice cream and enjoy!

1 Tsp vanilla extract
