If you have time, prepping ingredients ahead of time will make lunchtime the more relaxing time that it should be. It's worth the effort to as meal prepping of healthy ingredients will allow you to pull together lunches you can feel good about quickly. Two ingredients you can prepare a few days before are Kale and Noodles. To prep, the Kale thoroughly clean, chop and store your Kale ahead of time. The noodles can also be boiled and held in the refrigerator for use during the week.
How to Make
In a mixing bowl, add all ingredients, mix thoroughly. Top the salad with salt, pepper, and shredded parmesan.

1/4 cup yellow onion
1/2 cup of chopped Kale
1/2 cup of sliced white mushrooms
1/4 cup shredded parmesan
1 tbsp of Ceasar dressing
