We went foraging for a Sunday afternoon worthy snack and came up with this delectable surprise. Spirulina cream cheese, citrus-balsamic roasted mushrooms, and sliced almonds make this toast a savory treat. We call this Forest and Forage toast, but we could call it Algae and Fungi toast! Immune boosting, cancer and diabetes-fighting, antioxidants, good fat, and promotion of energy production are just some of the benefits you will gain from these ingredients. Did we also mention how tasty it is? Think of your favorite Italian olive oil and balsamic dipped bread with a kick of added flavor!

Forest & Forage Toast

How to Make

  1. Pre-heat oven on 350F.

  2. In a small baking dish, lay the mushrooms flat and cover with citrus balsamic dressing.

  3. Bake mushrooms for 10 minutes then remove from heat

  4. In a small mixing bowl, combine cream cheese and spirulina

  5. Toast slices of bread in toaster to desired crispiness

  6. Spread cream cheese over toast, top with mushrooms, and almonds

  7. Pour left over dressing on toast and enjoy!

Ingredients

  • 4 Tbsp of cream cheese

  • 2 Slices of bread- We recommend Ezekiel bread any variety. 

  • 1/2 Tsp spirulina

  • 1 Cup of portabella mushrooms

  • 1/2 Cup of citrus balsamic dressing. See our recipe for how to make the home made version.

  • 1/4 Cup of sliced almonds
