Thanks to MyFitnessPal's for this New England inspired shrimp roll recipe. These rolls are wicked good! They make a fresh meal after a long day on the beach. When a day comes together with perfect weather and food, you can't forget that great feeling.
Be sure to pick fresh shrimp and know the source of your shrimp. Imported shrimp vendors often misrepresent the shrimp's origin. Not having this information does not allow you to know if the shrimps has been contaminated with pesticides, antibiotics or antibiotic resistant pathogens. Pick fresh! If you do, you can expect to get a good dose of protein and healthy fat. This crustacean is low in mercury, high in vitamin D, and a good source of Selenium and Omega-3.

How to Make
In a medium bowl, stir together mayonnaise, yogurt, celery, onions, lemon zest, salt and pepper. Add shrimp and toss gently to combine.
Melt the butter and spread butter evenly over the buns and toast the buns in the oven until until lightly browned.
Add lettuce, top with Shrimp mix and goat cheese then enjoy!

1/4 cup (30g) celery, chopped
3 tablespoons green onions, chopped
1 teaspoon lemon zest, grated
1/4 teaspoon kosher salt
1/4 teaspoon black pepper
1 pound (454g) cooked shrimp, coarsely chopped
1 1/2 tablespoons unsalted butter, softened
4 1.75-ounce (50g) split-top hot dog buns
