Cauliflower Garlic Bread

Garlic bread is always a delicious luxury around our house. We love to have it with pasta of any kind, which means we could eat at least two or three times a week. So when we found recipes for cauliflower garlic bread, we knew we had to give it a try. While we had eaten riced cauliflower before, we weren't aware of how great this vegetable is. It's a true chameleon. This recipe was so surprising and will be a long-term, regular addition to our menu. The cauliflower turns into what feels and tastes very much like bread. It's amazing. You can eat this without any guilt and feel good that you are getting the added nutrients. Cauliflower is rich in folate, fiber, vitamin K, and has anti-inflammatory properties, to name a few of its benefits. You can even replace the butter and cheese used in the recipe for plant-based options to make this a dairy-free, vegan alternative. Cauliflower Garlic Bread

How to Make

  1. Preheat oven to 400°F. Line a baking sheet with parchment paper.

  2. In a blender, chop raw cauliflower until it becomes a very fine rice like consitency. 

  3. Transfer cauliflower to a cloth and press out any remaining moisture. 

  4. In a large bowl, mix cauliflower, cheese, garlic, eggs, italian seasoning, almond flour, and baking powder. 

  5. Create fist size balls and press on to pan to flatten

  6. Place in oven and cook for about 25 minutes or until edges turn brown and top is golden. When the bread is done, it should also easily come off the parchment paper.

  7. Add butter, oil and garlic to a small saucepan and heat on the stove just until butter is melted. Brush garlic butter mixture onto bread, making sure to get all the minced garlic evenly spread over surface of the bread. Sprinkle 1 tsp parsley evenly over bread. Sprinkle parmesan cheese evenly over bread.

  8. Briol for about 5 minutes or until cheese is melted.

  9. Sprinkle with remaining parsley and serve.

  • 1 Head of Cauliflower

  • 2 Tbsp of Italian seasoning

  • 1 Tsp of salt

  • 2 Large eggs

  • 4 Garlic cloves

  • 1/2 Tsp Garlic powder

  • 2 Tsp Parsley

  • 4 Tbsp Almond flour

  • 1/2 Tsp Baking powder

  • 2 Tbsp Olive oil

  • 2 Tbsp Butter

  • 1 Cup Parmesan
