A tasty pop of vitamin C from the artichoke will help your body fight off free radicals, which is a big win in cancer prevention efforts. Let's also not forget about getting a healthy dose of electrolytes from potassium and an ample portion of your daily allowance of iron and copper. One of the most nutritious lentils, the Cannellini bean, is described as a mood enhancer. The mild flavor of Cannellini beans pairs nicely with artichokes creating a flavorful and healthy appetizer. You can munch on this appetizer throughout the entire party!

Cannellini Artichoke Bean Dip

How to Make

Combine beans, artichoke, three tablespoons of the artichoke oil, greek yogurt, garlic, and lemon juice to a blender. Blend until smooth. Transfer to a baking dish and fold in 1/2 a cup of parmesan cheese, yellow onion, and salt—Bake on high at 425 for 30 minutes. Remove from heat, add parmesan cheese and black pepper and return to the oven for an additional 15 minutes.

1 cup of parmesan cheese
