It is so hard to stay healthy when you are rushing to work each morning. That is why I get so excited when there is time to experiment with quick and easy options that get me through the week. This recipe only takes a few minutes to prep but is so easy to grab on your way out the door in the morning. The best part is when it tastes so good, and you wouldn't dare skip this breakfast.
This Buttered Coconut Beet bread is on the must remake list! It turned out better than I even expected. Maybe it was the beets, or perhaps it was the powdered sugar(that's not even sugar!) Try it out, as I have no doubt you will love it as much as we did.

How to Make
Pre-heat the oven to 350F
In a blender, mix the beets, molasses, and chia seeds. Do not over blend as you want the consistency of jam.
Roll the dough flat and flatten it with a rolling pin until dough is about 1/4 inch thick
Melt the coconut oil and use it to coat the inside of the dough
Top the coconut oil with the beet jam
Roll the dough inward like you are creating a log. The layers of jam will be separated by dough.
Cook for 10 to 12 minutes or until the dough is golden brown.
Let cool and top with remaining melted coconut oil, almond slices, and confectioners Swerve.
Slice, serve, and ENJOY!

250g of beets. We recommend Love Beets
2 Tbsp molasses
2 Tbsp chia seeds
3 Tbsp buttered flavored coconut oil
1/4 Cup of confectioners Swerve
1/4 Cup of sliced almonds
