What's even better is that it is packed with bananas and blueberries, two nutritious fruits you should regularly incorporate into your diet. Plus, we have all heard how important it is to eat breakfast. According to Consumer Report's article "Why eating the right breakfast is so important," not eating breakfast in the mornings could ultimately lead to diabetes. The prolonged fast can cause your body to produce ghrelin, a hunger hormone, leading to overeating later in the day. As a result, your pancreas produces excessive insulin to compensate for the high levels of glucose. That is why we want to make sure you have an arsenal full of breakfast options. This recipe is so simple and yet, tastes like a treat! You can start your day off with this delicious, comforting mug treat, and your trainer won't even scold you for it.

Blueberry Mug Muffin

How to Make

Mix all the ingredients together in a mug along with half of the blueberries. Microwave for 2 mins.  Top with remaining blueberries and enjoy!

Ingredients

  • 1/3 Cup of quick oats (We recommend Bob Red Mill's Quick Oats)

  • 1/3 Cup almond flour⁣

  • 1/2 Tsp baking powder⁣

  • 1 Tsp cornstarch⁣

  • 1/2 Tsp vanilla extract

  • 1 Tbsp maple syrup

  • 1 Tbsp water

  • 2 Tbsp mashed banana

  • Handful of blueberries⁣
