Blackberry Butterscotch Bread

Blackberry and butterscotch, two flavors that get too little attention. Blackberries are full of health benefits that benefit our bodies in so many ways. They are full of antioxidants and vitamin C, to name two of it's most significant benefits. And, what a better way to get both of these flavors in a delicious bread! There is not much better than a slice of hot bread in the morning unless, of course, you can remove the sugar and create a gluten free version.
How to Make
Preheat oven to 350 degrees F. Lightly grease a 9x5 inch bread pan.
In a mixing bowl, combine flour, baking soda and salt.
In a separate bowl, cream together butter and swerve. Stir in eggs and blackberries until well blended.
Melt the coconut oil.
In a seperate small bowl, mix the melted coconut oil, arrowroot, molasses, and powered Erythritol or Swerve
Combine butterscotch mix with bread batter
Pour batter into prepared loaf pan.
Bake in preheated oven for 60 to 65 minutes, until a toothpick inserted into center of the loaf comes out clean.
Let bread cool in pan for 10 minutes before slicing
Ingredients
2 Cups all-purpose flour. We recommed Bob's Red Mill Gluten Free.
1 Tsp baking soda
¼ Tsp salt
½ Cup plant butter
½ Cup Swerve
2 Eggs, beaten
1 Cups blackberries
2 Tbsp butter flavored coconut oil
1 Tsp Molasses
2 Tsp Arrowroot strach
1/2 of Powered Erythritol or Swerve
